Smoked Produce – London Smoke and Cure Ross says “Hello all! We’re back from our week away, feeling fresh and full of vigor and we’ve channeled all that energy into making some really great produce for you this week. We’ve got some superb bacons – four flavours, air dried, organic and packed full of taste. There’s also the return of thehot smoked pork belly using Gill Wings best quality pork. But, but, but… the thing we’re most excited about this week is the introduction of some really juicy hot-smoked prawns – crikey, they taste sooo sweet, I can’t stop nicking them from the fridge so I’m afraid they’re now in limited quantities only!
Right, this weeks product profile focuses on.. oh heck, lets do prawns – they’re super easy and when the sun comes out you could do them on the bbq. So this is what you’re going to do –
Take a bunch of the best, freshest large prawns you can find
Mix up a bowl of sea salt and brown sugar in a 80/20 ratio. (we like to use leftover cure from our salmon so it’s already rich in fishy flavour)
Mix the prawns making sure they’re really well coated.
After 15-20 minutes wash them off and pat them dry
On a barbeque, add some chips of oak or beach to get a little gentle smoke going. If you haven’t got access to wood just come and ask for some 🙂
Put your little prawny beauties on the warm barbeque, ideally one with a lid. We aim to have them in the smoke chamber for around an hour at 80degC. You might need to take your time and keep checking them but hey, the sun’s out, the election is over and you deserve the break!
Afterwards you can instagram all your friends so they know how impressive you are. And the next time you have a BBQ more people will turn up. It’s simple science.”

We’ll have bomboloni – pillowy-soft Tuscan-style brioche doughnuts filled with homemade strawberry and vanilla jam and topped with a dab of organic whipped cream – plus a glamorous white chocolate and strawberry gateau, and moreish raspberry bakewells.
We’re also bringing such classics as our Top Banana cake with handmade dulce de leche; citrus chiffon cake with sherbet lemon frosting; double carrot cake;Ambassador’s chocolate and hazelnut cheesecake; peanut butter bars and peanut butter cookies (yes, we love peanut butter…); and preserved lemon meringue pies.

Brockmans – Jason says “A small amount (the first of many) of our Raspberries and Gooseberries will be at the market. Our first lot of Rainbow Chard is also now ready. Globe Artichokes are another new line and we have another crop of Rhubarb. The stall will be very well stocked so come along and get some – Mixed salad; Cucumbers; Vine Tomatoes; Aubergines; Courgettes; Lettuces; Herbs; Apples; Carrots; Onions; Duck Eggs; Mushrooms; Peaches and Nectarines.”
