Guest lunch – Jerky Fridays Patsy is making “rice & peas; jerk pork; jerk chicken; curry mutton and callaloo.”
Wine – Wine Scouts Pedro says “I’ll be opening a fresh, fragrant Sauvignon Blanc from a little known appellation north east of the Loire. The palate is crisp and zingy with notes of tangy apples, limes and lemongrass, leading to a soft, rounded finish. A period of maturation on lees has added complexity to a wine that is delicious as an aperitif, or a partner to simple Asian cuisine. Winemaker Emmanuel Delaille practices lutte raisonnée and advocates minimum intervention, as well as restricting yields to ensure optimum quality and ripeness of the grapes.”
Free from – Elvira’s Secret Pantry Elvira is making us “Cakes: blueberry and almond tart, NEW rhubarb and strawberry cake, raspebrry and rosewater loaf, blueberry and lemon loaf, fruit tartlets (also vegan), butternut squash and chocolate cake, (V) chocolate and raspebrry cake. Comfort & Joy: Perfect picnic food
Lunch & Deli – Comfort & Joy Hot tasty wraps, salads and those famous (enormous) scotch eggs plus takeaways – curries, lasagne and more.

Smoked Produce – London Smoke and Cure Ross says “We’ve got a lovely range of locally smoked and cured products for you this Saturday – perfect for fathers day of course, but they’ll add wonders to any meal you’ve got planned for the week, or make a lovely addition to a picnic. In particular we’re bringing back that wonderful organic white pepper, fennel and lemon pork belly., So fresh and the lemon really cuts through the tasty fat of the pork. We’ll also have some smoked salmon pate, and a limited number of sliced salmon packs. And…. hot smoked prawns!! They disappeared in no time last week so come early!

Different woods – different flavours at London Smoke and Cure
And, in the last of our series of secret recipes i thought we should tell you about Pastrami! Yes, its that product that made Mel Griffiths go ‘ooooh’ in When Harry Met Sally, and for good reason too! So here’s what you’re going to do:
First, you’ll want to make a great brine. Mix these together –
5 Litres Water
33g Cure No.1 (remember we talked previously about using this powerful ingredient very carefully. Come down and talk to us if you’d like to learn more)
2tbsp Crushed juniper
2tbsp Crushed pepper
2tbsp, shredded bay
1tsp each of – cumin, coriander, mace, allspice, cinnamon, chilli, ginger, garlic powder.
Next, go to Andrew at Gill Wing farm and ask him for a chunk of good value beef. Ideally you want to go for something large and we typically use brisket but it will work well with any cheaper cut – silverside, LMC or even beef rib (mmm).
Immerse the beef in the brine for 8 days, turning daily. At the end of those 8 days you effectively have Saltbeef and if you want you could simmer it now in fresh water for a few hours and make the most amazing Rueben sandwich on the planet. Alternatively, give the joint a good wash, coat in black pepper and coriander and then smoke on as low a temperature bbq as possible for around 8 slow hours. Whilst that’s happening, it’s absolutely essential that you sit back and relax in whatever way you choose.
When the cooking is finished, take out your marvelous piece of meat and dive on in. Carve it thinly, layer it up on bread with pickles. Know deep down inside that you’ve created something immense and that you are special for doing so. Come down and let us know how it goes.”
Brett & Bailey: Strawberry & white chocolate gateau
Cakes – Brett & Bailey Joe says, “The Overground Festival is back at last! And we’ll have everything you need for a sweet, sweet picnic in Crystal Palace Park. We’re bringing indulgent, Fairtrade 70 per cent dark chocolate brownies with pecans and white chocolate chunks; milk chocolate and orange cookies; strawberry and white chocolate gateau with lashings of limoncello; London’s best chocolate Guinness cake with super-smooth cream cheese frosting; a baked vanilla bean cheesecake bursting with seasonal summer berries; and some scrumptious apricot and pine nut bakewells.
We’ll also have sticky buns, cardamom knots, and this week’s bomboloni – our Tuscan-style brioche doughnuts – will be filled with homemade crema catalana, inspired by our recent trip to Barcelona. Talk about trans-Europe excess…
Finally, this weekend you’ll find relief from the summer sunshine with our homemade fruit drinks. Choose from mint lemonade or a citrus cooler with oranges and red grapefruit – and we’ll be bringing plenty of ice to keep them (and you) chilled. Missing the market? Brockmans – Jason says “A small amount (the first of many) of our Raspberries and Gooseberries will be at the market. Our first lot of Rainbow Chard is also now ready. Globe Artichokes are another new line and we have another crop of Rhubarb. The stall will be very well stocked so come along and get some – Mixed salad; Cucumbers; Vine Tomatoes; Aubergines; Courgettes; Lettuces; Herbs; Apples; Carrots; Onions; Duck Eggs; Mushrooms; Peaches and Nectarines.”
